At Christmas time, Belizeans at home and abroad looks forward to having some Black Fruit Cake. Whether you are baking it or buying. We look forward to the smell of the spices in the cake baking and the taste of the cake soaked in strong rum. It is always a specialty at Christmas time in Belize and across the Caribbean.
Both black and white fruit cakes are prepared by adding mixed fruits, cherries, nuts, black coloring (burnt sugar), molasses, spice and of course, cakes are soaked with rum frequently to keep cakes moist.
