Hot Cross Buns

3lbs flour
2 packs of yeast
1 tsp nutmeg
1 tsp cinnamon
Optional (add other spices if preferred)
½ lb shortening
1 cup raisins
1 cup brown sugar (for a lighter color bun use white sugar)
coconut milk (warm before using)
1 tsp vanilla

Add flour, nutmeg, cinnamon, and raisins in a mixing bowl
Add yeast (if instant or set in warm liquid to raise before using)
Add shortening and sugar to four mixture
Add warm coconut milk to flour mixture. If dough is too wet, sprinkle little flour as needed
Add vanilla and knead well

Roll dough into bun size and set them on a baking sheet on the counter near the warmth of the oven
Cut thin strips of dough to make cross on each bun
Let raise approximately 30 mins
When the dough is ready, bake at 375oF for 25-30 minutes or until brown

Set aside and glaze with light corn syrup or honey (optional)
